Miriam's Favorite Granola

10 c. oatmeal
2 c. wheat germ
1 to 2 c. brown sugar
1/2 c. brown sugar
1/2 c. vegetable oil
1/2 c. honey
1/3 to 1/2 c. peanut butter
2 t. vanilla
1 t. salt
2 c. raisins

Mix dry ingredients. Heat oil and honey until lukewarm, then stir in peanut butter and mix with dry ingredients. Pour mixture into shallow pans. Toast at 275 for 30 to 40 minutes or until golden brown, stirring occasionally. Add raisins after granola is toasted.

It's been a very country couple of days. Yesterday we went out to a farm/hunting playground outside of Jackson for a little communing with nature. I was able to flaunt my fishing skills and actually caught 6 perch/brim, all by myself! (pictures to follow). Although I didn't bait the hook or take the fish off the line, everything in between was all me. Yes ma'am.

Today we went out to Ada's unusual country store where they sell various and sundry goods created by or for the booming Amish community here in Tennessee (it's not that booming... but the phrasing sounded nice). While there I purchased a couple of cookbooks designed for wholesome sugar free cooking, and I'm very excited to try my hand at bread making. I'm sure it's possible...

One book contained two recipes created by a lady named Miriam, so I thought it fitting to include one, as I happen to know of one very cute gal named Miriam, and I'm sure she'll like granola once she grows teeth.


After that we headed to the Catfish Cabin for lunch. Very rustic and very fried. The only thing remotely healthy was the coleslaw, and I no likey the slaw. There they serve hushpuppies before the meal instead of bread. They're fried balls of corn meal, onion and some other ingredients. Very good for the taste buds, not so good for the ol' ticker.

I think this is why your average red neck is usually missing some teeth. It's the scurvy caused by the less than fresh diet.

Ever hear of Carl Perkins? Seems he was pretty famous, and from Jackson, TN. His son Stan plays the guitar at the church I've been visiting. Interesting, eh?

I've been catching up - it's been busy moving and all... gee I wish I had time to jsut travel around and see the sites.... sigh.

well when yo come to visit i'll give you a tour of my hosue... no as exciting as Jackson TN. unless you're me of course.
